There's a few options. A common one is to play casual games like Furball where players each control 1 or 2 ships and shoot each other for victory points from damage and kills. There's lots of variations built on furball like King of the Hill and Droid Match, too. The advantage of Furball is it's fast and gamey, allowing for lots of players (e.g. anywhere from 3 to 12 or more), but it doesn't allow much in the way of squad strategy, and feels a bit distant from core x-wing because of that.
For full squadron games, a common method is to play standard 200-point games but have players on a team sharing the points. So it may be 100-100, or 115-85, or 400 vs 200-200 or whatever. When the other side is just one player, they may have an advantage because a single mind is commanding the full team, and they don't have a points cutoff making it hard to build exactly what they need, and the split team may be pairing an inexperienced player with a new one; in such cases giving the split side 210 or or 225 or 250 points to split can help even things out again.
Another neat option is the multiplayer scenario games released by FFG. If we don't have those added to the wiki we probably should at some point... but it's stuff like area capture, base assaults, kill a specific ship, or shoot for points, etc. This expansion is centered around Epic play and higher point values, but you don't need huge ships to do most of the scenarios.
